Pale straw yellow, light and effervescent, with aromas of white flowers and green apple with a mineral edge underneath. The palate is crisp and clean — acacia honey, white peach, tart nectarine — with just enough soft fizz to keep it lively and just dry enough (two grams per liter of residual sugar) to drink all the way through without cloying.

Pierluigi Lugano of Enoteca Bisson works with Eli Spagnol of Torre Zecchei, a producer with just thirty hectares in the elite Valdobbiadene district — tiny by Prosecco standards. The grapes are hand-harvested from steep, terraced hillside vineyards where the work never stops. Temperature control during fermentation in stainless steel preserves the delicacy. The result is bone-dry and mineral-driven, nothing like the saccharine bulk Prosecco that floods the market. This is what happens when someone who cares about wine makes wine instead of filling bottles.
