Chardonnay + Meunier • Chavot-Courcourt, Coteaux Sud d’Épernay, Champagne, France
Green apple and white peach with crushed chalk and wet stone, crystalline and bone-dry, with a little marzipan creeping in as it opens. Chavost started in 1946 as a cooperative of local grower families in Chavot-Courcourt, just south of Épernay. In 2019, Fabian Daviaux, a seventh-generation grower, took over as cellar master and steered the whole house toward zero-sulfur Champagne. The vines are 35 to 60 years old on clay, limestone, and chalk, hand-harvested, first-press juice only, fermented with native yeast in stainless steel and aged at least 20 months. It’s bottled with zero dosage and zero added sulfites. Pure as it gets.
Pair it with: fried calamari, extra lemon, a Tuesday that deserves Champagne.
