Caves Jean et Sébastien Dauvissat Chablis Premier Cru ‘Vaillons’ 2023
Chardonnay • Chablis Premier Cru, Burgundy, France
Honeyed and pure, with a salty, shellfish-like edge and fresh citrus, then full and ripe on the palate with a gentle bitter twist at the end that keeps it all in check. The Dauvissat family has farmed the same parcels around the hamlet of Chichée since 1899, and they still make the wine in tiny cellars under a 17th-century farmhouse. Sébastien runs the estate on his own now, and he’s related to the famous Vincent Dauvissat, so this is the “other” Dauvissat that collectors whisper about. About half of their roughly 25 acres sits in Vaillons, a southeast-facing Premier Cru on Kimmeridgian limestone and flint, and a touch of oak gives this one a little extra structure. That’s lovely.
Pair it with: moules frites, extra bread for the broth.
