Clos Cibonne Tibouren Rosé 2024
Tibouren + Grenache • Côtes de Provence Cru Classé, Provence, France
Citrus peel, wild strawberry, and dried herbs, with a savory, salty, slightly nutty depth and a long mineral finish. This isn’t your poolside Provence pink. Clos Cibonne sits on windy bluffs above the Mediterranean near Toulon, one of only 18 Crus Classés in Côtes de Provence, and the family helped create the Côtes de Provence appellation in 1973. Olivier Deforges, the fifth generation, still works mostly by hand, farming organically and building the wine around Tibouren, a rare, thin-skinned local grape that needs that sea wind to thrive. It ages in ancient oak foudres, some over 120 years old, under a veil of flor like a Jura or Sherry, which is where the savory magic comes from. Weird and wonderful.
Pair it with: a big pot of bouillabaisse, rouille on everything, a long lunch.
