Envínate ‘Palo Blanco’ 2024
Listán Blanco • Valle de la Orotava, Tenerife, Canary Islands, Spain
Salty and citrusy, with wild herbs and a smoky, mineral grip, lean and tense right through the finish. Envínate is four friends from enology school: Roberto Santana, Laura Ramos, Alfonso Torrente, and José Martínez. They started making wine together in 2008 and now work old vines across Spain, from Ribeira Sacra in Galicia to Almansa to Roberto’s home island of Tenerife. Palo Blanco is Listán Blanco from vines around 100 years old, about 1,970 feet up on Tenerife’s damp north side, growing in black volcanic sand and basalt. It’s farmed organically, fermented with native yeast in big concrete tanks without temperature control, then aged ten months in old oak foudres. Volcano wine, and this is good.
Pair it with: papas arrugadas with mojo verde, salty fingers, sunset.
