Evening Land “Seven Springs” Chardonnay 2023
A vivid, beautifully composed Oregon Chardonnay, this wine opens with Meyer lemon, Asian pear, Golden Delicious apple, white flowers, and a gentle salted pie crust note, all wrapped in a bright mineral tension that gives the wine energy and lift. On the palate, it is textured and lively, with fresh acidity, restrained oak influence, and a long, polished finish that makes it especially lovely with roast chicken, crab cakes, halibut, creamy pastas, or simply shared at the table with people you love.
Key Details:
Producer: Evening Land Vineyards — an acclaimed Oregon estate centered on the historic Seven Springs site in the Eola-Amity Hills now run by Sashi Moorman and team. Evening Land’s philosophy is rooted in careful stewardship of this single exceptional vineyard, with a focus on expressing place through Chardonnay and Pinot Noir.
Region / Appellation: Eola-Amity Hills AVA, Willamette Valley, Oregon, USA. Sourced from Seven Springs Vineyard.
Varietal: 100% Chardonnay.
Vintage: 2023.
Style / ABV: Dry white wine; 13.3% ABV on the tech sheet. The wine undergoes uninoculated primary and full malolactic fermentation, and is raised in barrel with an intentionally reductive, low-oxygen élevage that helps preserve tension and precision.
Why It’s Special: This bottling is one of Evening Land’s most important wines each year, drawn from different rows and vine ages across Seven Springs to capture what the winery calls the “gestalt” of the vineyard. Seven Springs itself is one of Oregon’s landmark vineyard sites, dry-farmed, LIVE-certified, and farmed biodynamically, which adds even more depth and identity to the wine.
Food Pairing: Excellent with roast chicken, lobster rolls, Dungeness crab, seared scallops, mushroom risotto, or triple-cream cheeses. Its combination of freshness, texture, and savory mineral character gives it a lot of range.
