Aromatic and floral, crisp and lightly sparkling, with just enough juiciness to keep you going back for another pour. The Selbach family’s wine roots in Zeltingen, on the Mosel, reportedly go back to 1600, and J. and H. Selbach is the family’s original wine business. Johannes Selbach made his first vintage in 1975, and his son Sebastian now runs the cellar and vineyards alongside him. This one starts as a real wine: Muskat and Rivaner from slate, loess, and loam soils, gently pressed and fermented in stainless steel, then sent out to have the alcohol taken out by membrane filtration. The name means “spicy sparkler,” which is exactly what Johannes called it the first time he tasted it.
