Green apple, white peach, and grapefruit with a flinty, salty streak, lean and lively with acidity that makes your mouth water. The Knoll family has farmed in Unterloiben, on the Danube, since the early 1800s, and the Saint Urban label (he’s the patron saint of winemakers) has been on their bottles since 1962. Everything is hand-harvested off steep terraces, fermented with native yeast, and raised in big neutral oak casks, the old-school way. Federspiel is the Wachau’s middle tier, the crisper, lighter style meant for drinking now, and this one comes from the vineyards around Loiben. So balanced.
Pair it with: a mountain of spring asparagus, hollandaise on the side, windows open.
